Mini Funnel Cakes



Ingredients :
  • 1 cup milk
  • 1/2 t cinnamon
  • 1/4 cup sugar
  • 2 T vegetable oil
  • 1 egg, beaten
  • 2 cups flour
  • 1 t baking powder
  • 1/4 t salt 

Process:

  • No special technique involved here.  Just mix it up in a bowl.
  • Heat oil to 375.   I like to use an electric skillet rather than a pan on the stovetop, but it's really about personal preference.  
  • Spoon the batter into a pastry bag, or a plastic ziplock bag with the tip cut off.
  • Squeeze the batter into the hot oil, creating that distinctive squiggly shape as you go.
  • Set the fried funnel cakes on a paper towel to drain any excess oil, and sprinkle with powdered sugar.

Homemade Mini Corn Dogs


Ingredients
  • 6 Hot Dogs
  • 1/2 cup yellow cornmeal 
  • 7 Tbs all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup milk 
  • 1 egg, lightly beaten
  • 1 Tbs honey ** If you don't have honey, substituted with 2 table spoon of sugar** 
  • vegetable oil for deep frying
  • wooden sticks
  • ****If Batter is to tick add 2 table spoon of milk and mix****
Instructions
  1. Heat oil to 375 degrees. Oil should be 2 to 3 inches deep.
  2. Cut hot dogs in 1/2's . Stick a small wooden stick in each hot dog.
  3. Combine dry ingredients in a small bowl.
  4. Combine milk, egg and honey.
  5. Add wet ingredients to dry ingredients and whisk until well blended.
  6. Pat hot dogs dry with a paper towel.
  7. Dip each hot dog in batter and gently lay in the hot oil. I did mine in batches of 4-5 hot dogs at a time.
  8. Fry for about 3 minutes each until golden brown. Serve warm.      ENJOY !!!!!!!
